Made a recipe I found online somewhere and scribbled down, can't find site anymore, if anyone recognizes it please let me know. I made many changes and love the results, as does an enthusiastic bedheaded, blueberry mouthed E! We had a great time talking about egg yolks vs. whites, and she loved handling the yolks to drop them in the cup for later.
French Toast Rounds
4 egg whites, whipped to stiff peaks
1 tsp butter melted
1/2 tsp baking soda
4 tsp blanched almond four
2 tsp coconut flour
1 tsp agave
1/4 tsp cinnamon
extra butter to cook
1. whip 4 egg whites to stiff peaks.
2. while mixing, in a small bowl mix rest of wet ingredients.
3. add dry ingredients to the wet, blend well
4. add this to the mixed egg whites, blend well in mixer
Add to skillet greased with butter over low heat. It does not bubble so keep an eye on them and flip when golden on skillet side.
